From downtown Boise & beyond, 2026 is shaping up to be a year of meaningful additions across price points and cuisines. Below is a curated look at what’s opening… and some inspiration for your culinary bucket list! 

 

Downtown Boise & Boise Neighborhoods

El Gaucho – Downtown Steakhouse Arrival

  • Seattle-based Fire & Vine Hospitality is bringing El Gaucho to the former Western Proper space. Expect classic tableside service, dramatic presentation, and a polished steakhouse experience.

Cán Coctelería – A Refined Speakeasy Concept

  • From the team behind Amano, Cán Coctelería has opened in the Smith Block building with a Prohibition-era aesthetic and a cocktail-forward menu alongside elevated Mexican fare.

The Boise Post – Rooftop Dining

  • Set to crown Boise’s newest high-rise hotel, this rooftop restaurant will pair skyline views with seasonal cuisine when it opens this spring.

New Wylder Hospitality Concept

  • Following White Rabbit’s closure, Wylder Hospitality Group is introducing a fresh concept in the space… details forthcoming, but expectations are understandably high.

Boise Thai Noodle House Expanstion

  • A second location brings pad Thai, curries, and longtime favorites back into the downtown rotation.

Schnitzel Fritz – European-Style Deli

  • From the founder of Schnitzel Garten, this new concept will focus on schnitzel sandwiches, baguettes, salads, and pastries.

Betty’s Café – Boise Bench

  • A neighborhood breakfast and lunch spot with French press coffee, house-made pastries, and approachable comfort classics.

Spud Daddy – BODO Addition

  • A new concept headed to BODO will center around oversized, fully loaded Idaho baked potatoes — a playful but distinctly local addition to downtown’s fast-casual lineup.

Handel’s Ice Cream – First Idaho Location

  • The nationally known brand is expanding into Idaho, bringing its long-standing, small-batch ice cream reputation to the Treasure Valley.

Garden City’s Continued Evolution

Dude DeWalt Cellars – New Tasting Room

  • An expanded tasting room experience near the Greenbelt continues to solidify Garden City’s identity as a wine corridor.

Krossfade Kombucha Cocktails – Chinden Blvd.

  • A kombucha-based cocktail bar concept bringing a distinctive beverage program to an industrial stretch that continues to transform.

Eagle’s Expanding Options

Lalo & Social Oak

  • From the Sid’s Garage ownership group, Social Oak will introduce a Southern-inspired sister concept alongside the popular Mexican restaurant Lalo.

Gather Brewing

  • A Texas-based brewing company taking over the former Spring Creek Brewing space, adding to Eagle’s growing collection of gathering spots.

Meridian’s Growth Corridor

El Pollo Loco – First Idaho Location

  • The national chain is planning its Idaho debut in Meridian, bringing its flame-grilled menu to the valley.

Boise Crust – Brick-and-Mortar Expansion

  • The popular Detroit-style pizza truck is transitioning into a permanent location.

Pho 7 & Baguette

  • Vietnamese bánh mì, pho, and bubble tea add to Meridian’s increasingly diverse culinary landscape.

Brooker’s Founding Flavors Ice Cream

  • A Utah-based concept with a distinctive historical theme opening off Chinden.

Village at Meridian Expansion

  • Additional national brands, including Paris Baguette and Flower Child, are slated to join the retail center’s lineup.
