Boise’s dining scene is buzzing again, with fresh concepts, creative expansions, and plenty of local passion behind the new openings. From Thai noodles downtown to sourdough bread on 9th Street, here’s a round-up of ten delicious developments to keep on your radar this fall.

 

1. Boise Thai Noodle House Heads Downtown

A beloved West Boise favorite is bringing its authentic Thai flavors to the heart of downtown. Boise Thai Noodle House — known for its Pad Thai, curries, and drunken noodles — will soon open a second location at 908 W. Main Street, filling the gap left by Alia’s Coffeehouse. Owners Frank and Pisutkan “Pitsy” Adams (who hails from Chiang Mai, Thailand) are excited to introduce a sit-down Thai restaurant to downtown, offering a warm, family-run dining experience rooted in authentic flavor.

 

2. Burread Bakery Rises on 9th Street

Locals have fallen for Mike and Megan Burr’s artisan sourdough loaves at the farmers’ market, and now their bakery dream is taking shape. Burread Bakery is opening its first brick-and-mortar location downtown, featuring European-style breads, pretzels, and pastries — all made from slow-fermented sourdough. Expect long-fermented loaves (30–48 hours) for great flavor and digestibility, plus indulgent sourdough croissants, danish, and brioche.

 

3. Lalo Brings Baja Vibes to Eagle

From the team behind Sid’s Garage and Gatsby, Lalo promises an immersive cantina experience inspired by the heart and soul of Mexico. Owners Nicole and Will Primavera drew from their heritage and travels to create an atmospheric escape filled with art, light, and vibrant energy. The menu and setting pay homage to Baja and Mexico City, blending culture, craft cocktails, and warm hospitality in true Primaveras fashion.

 

4. Dusty Miller Goods Joins Downtown Boise

The much-anticipated neighborhood bakery The Dusty Miller is still in the works on Garden Street, but in the meantime, owner Kaya Speagle is debuting Dusty Miller Goods — a bakery and retail space on Main Street. The shop will serve pastries, brunch bites, and locally made goods, offering a taste of what’s to come when the full bakery and café opens later on Garden.

 

5. Raibu Sushi Bar Brings Omakase to the North End

Sushi lovers, take note: Raibu Sushi Bar introduces Boise’s first omakase-style dining experience to the North End. Located off Fort Street near the Boise Co-Op, Raibu offers a chef’s-choice tasting menu highlighting premium Japanese fish and seasonal ingredients. Expect an intimate setting (with just six Omakase bar seats), a refined menu featuring A5 Wagyu, and a focus on thoughtful, personal service.

 

6. Koco Bell Express Pops Up Downtown

Korean street food favorite Koco Bell is going downtown with a fast-casual twist. Koco Bell Express will open at 116 N. 5th Street, serving the same bold, flavorful dishes in a grab-and-go format. The new concept will offer the convenience of a quick stop without sacrificing the taste fans love from its Eagle and West Boise locations.

 

7. Skosh Wine Bar Joins the West End

A new neighborhood wine bar is coming to 27th Street Crossing, bringing relaxed, small-scale charm to Boise’s West End. Skosh Wine Bar, founded by Michelle Nenov, offers “a little bit of everything” — from Pacific Northwest wines and bubbly to mocktails and light bites. Guests can expect charcuterie, butter boards, and fresh sourdough from neighboring Glutonia, plus a dog-friendly patio complete with frozen treats for four-legged visitors.

 

8. A Cozy Café Planned for Boise’s North End

The 15th Street Café is in the works — a new neighborhood gathering place set within a historic residential property near Washington Elementary. Owners Brandon and Christina Turpin are reimagining their former home on Lemp Street as a community café with indoor-outdoor seating and trail access. Once open, the café will serve as a walkable spot for coffee, pastries, and conversation right in the heart of the North End.

 

9. Devil’s Bedstead Winery Opens in Sunnyslope

A familiar wine family has launched a new venture in the Treasure Valley’s premier wine country. Greg and Kristen Koenig — longtime figures in the Idaho wine scene — have opened Devil’s Bedstead Winery in Caldwell’s Sunnyslope area. The name nods to a peak in the Pioneer Mountains, while the wines spotlight estate-grown viognier, merlot, and cabernet sauvignon from vineyards the Koenigs have cultivated for decades.

 

10. Swig Expands Again in Meridian

The Utah-born soda sensation Swig is opening another Meridian location — this time on Ten Mile Road near the I-84 interchange. Known for its “dirty sodas” (sodas with cream, lime, or coconut flavor add-ins), Swig also serves cookies, pretzel bites, and hot cocoa. It joins a growing lineup of quick spots along the Ten Mile corridor, including Chick-fil-A, Blaze Pizza, and Dutch Bros.
